超隱密的油雞大王來了,躲在巷子裡面,而且巷子口也沒有任何招牌
這家或許很多台南人都還不一定知道
原本位在大馬路邊的鬍鬚經營約10年,因道路拓寬而搬遷到巷內現址
在小巷子裡面又經營了有30多年,到目前屹立不搖,可見有他獨到之處

傳統油雞的做法是將食材放入每一店家自己獨特的滷汁裡面,沸騰的滷汁
或許是將爐火關閉,用滷汁的餘熱將食材悶熟
或許是將爐火保持在最小的狀態,溫和的火力緩慢地將食材煮熟
這時候時間的掌握就很重要了
影響雞隻的口感主要因素除了雞隻本身的品質,再來就是這時間的掌握
這裡的油雞本身味道不會很重,油亮油亮的外皮看起來就很誘人
肉質滿有彈性的,相當好吃
如果喜歡重口味一點的,可以將店家提供的醬汁淋在油雞上,用保鮮盒封好放在冰箱一晚,隔天就會變成重口味的油雞囉~
酸酸甜甜的廣式泡菜,很清脆、也很清爽
