原來是因為老闆黑眼圈很深,被朋友取了熊貓這綽號,😂

熊貓桑是個愛旅行的美食家,
有一次到日本旅行的時候吃到炸肉餅就愛上了,
回台灣之後很想念那味道,
於是就開始投入研究,自己嘗試著做做看,
最後就開了一家炸物店,把美味分享給大家,
店裡販賣的商品就是各式手打炸肉餅、炸雞肉丸子以及季節限定炸物。

熊貓桑第一次自己創業當老闆,
從新鮮食材的挑選採購、前置作業(現點現切裹蛋液及麵包粉)、下鍋油炸,
還得在前台招呼客人點餐和送餐,都是親力親為,集老闆、伙計、主廚於一身,
也真是難為他了……
說起炸肉餅,它可是經典的日式洋食喔!
所謂日式洋食源起明治維新的西化政策,是指國外傳入日本後才本土化的西餐,例如可樂餅、炸豬排、日式咖哩飯、漢堡排……
而可樂餅或炸肉餅最早是由法國的炸肉餅演化而來,
這種西方與東方文化激盪融合的洋食,交織出一道兼容並蓄的家常料理,簡單又好吃的滋味令人難以忘懷。
熊貓桑的炸肉餅,比較像是可樂餅的外衣和炸漢堡排內餡的一個結合體,
市面上看到的可樂餅,裡面包的大多是馬鈴薯泥或者南瓜泥;

炸漢堡排的作法就是將牛肉和豬肉絞碎後混合在一起簡單地裹上麵粉、蛋液和麵包屑,下油鍋炸成香脆的肉餅。
店內的陳設從外面就可以一覽無遺,
器具擺放各就各位,廚房也很整潔明亮。
最引人注意的是油炸時使用的兩個鍋,

左邊是鐵鍋,右邊則是上萬元的銅鍋,
鐵鍋導熱快,短時間就可以加熱到180℃,適合少量炸物;
銅鍋加熱慢,但較保溫,在日本都是專門炸天婦羅用的,
熊貓桑說當大量食材要下鍋,會降低油鍋的溫度,導致炸物受熱不均,
這時他就會選擇用銅鍋來炸,快起鍋前再放入鐵鍋炸至金黃色撈出。
拍照時正好看到熊貓桑在炸櫛瓜,
就看他不時用紅外線測溫儀掃一下鐵鍋溫度,

先做成絞肉去揉捏製成,不可缺少的步驟便是手摔!目的是讓空氣排出,摸起來要緊實,也要打出筋性,讓肉質更富有彈性,吃起來順口又厚實。另外牛肉餡還加入了洋蔥,讓牛肉炸肉餅更多汁,並且降低油膩度。聽說這是熊貓桑的心頭好,愛吃肉的老饕不妨來嘗嘗!

豬肉炸肉餅
來自西港的豬肉,採用的部位是梅花肉,肉質不乾柴,油脂比例也很完美,先做成絞肉去揉捏製成,處理過程一樣得用手摔排出空氣,並打出筋性;內餡還加入了薑汁提味,吃起來口味和一般的豬肉排很不一樣。

雞腿炸肉餅
雞腿炸肉餅內餡的顆粒比較大,也有加入薑汁提味,因為熊貓桑處理的功夫很確實,摔打到有筋性,所以吃起來真的很彈牙,絕對會一口接著一口停不下來!

這道料理真的很涮嘴,也是小孩的最愛,一份有8粒,一上桌就快被大家分食一空!外觀看似雞米花,但是size大很多,最大差別是肉質鮮美多汁,薄薄一層的麵衣不會搶了雞肉丸子的風采,點餐時千萬別漏掉他,超推薦的!
